MAKES 12 MUFFINS.
INSTRUCTIONS
Equipment Needed
Mixing bowl, Whisk, 12 mould Muffin Tray.
Ingredients Needed
95g Butter, 4 Eggs. If making a dairy free alternative substitute the butter for a dairy free butter alternative.
Directions
Prep: Line your muffin tray and preheat the oven 175°C.
Step 1: Melt the butter in the microwave for approximately 45-60 seconds.
Step 2: Empty 40g of the packet mixture into the melted butter and whisk. Add the eggs 1 at a time whisking each time. Add the rest of your dry cake mix 1/3 at a time whisking each time until well combined.
Step 3: Pour the mixture evenly into your prepared muffin tray and bake for 15-20 minutes - check every minute after 15 minutes to make sure that they are not beginning to burn. Remove from the oven.
Step 4: Leave to cool in the muffin tray for 20 minutes, then gently remove and cool on a wiring rack until completely cooled. Decorate/ice them if required or just eat them as they are!

STORAGE INSTRUCTIONS
Store in a cool, dark area. Once made store in a cool, dark area or if adding frosting store in the fridge for 3 days or freeze (without frosting) on the day for up to 6 weeks.
