This Kit Contains
- Barley Miso 500g - The addition of barley intensifies the flavour of this miso. Japanese chefs will often pass barley miso through a sieve to enhance the flavour as the barley reacts with the air. Excellent for a rustic miso soup with character and depth this miso can also be used to marinate meat, fish and vegetables and can be added to any soup where depth and umami richness is called for. Pair with our Kombu for an excellent quality miso soup.
- Ma Kombu 25g - Ma Kombu (Laminaria Saccharina japonica) from Hokkaido is the most popular kombu for producing high-quality dashi stock. Possessing broad, thick leaves it has a refined sweetness and produces clear stocks and broths.
- Katsuobushi Bonito Flakes 40g - Fine shavings of Skipjack tuna (Katsuwonus pelamis) that has been dried, fermented and smoked under the watchful eye of Japanese craftsmen based in Northern Spain. Typically used to create dashi stock with rich, smoky, umami-laden flavours. Dashi is the starting point for miso soup and other dishes including Soba, Udon and Ramen noodle soups. Almost weightless but wonderfully flavourful katsuobushi flakes are also used to garnish rice and noodle dishes. Hot vapours emanating from these dishes cause the katsuobushi to twist and turn giving rise to the term "Dancing katsuobushi" which always impresses and intrigues when seen for the first time. For dashi stock add 30 - 40g of flakes to boiling water, remove heat and allow to sit for 2-3 mins. Strain through a fine sieve and use the dashi immediately. For a more complex, mineral-rich stock add kombu.
- Wild Wakame Seaweed 50g - Subtly sweet, with a strong mineral flavour and tough texture Wakame is perfect for miso soup. It can also be pan-fried to accompany fish dishes or eaten raw as s very healthy Vegan biltong!
