Hojicha Green Tea Hojicha is a specialist tea from Kyoto Japan. It is produced from Bancha style leaves, which is the name given to the third tea harvest of the picking season. The leaves are first dried and heated like an orthodox tea, then roasted in a pan. The slow roasting process produces a tea with a unique sweet flavour with a pleasant aroma. The roasting process removes much of the caffeine in the leaves, and, unusually for green Tea, is made with boiling water. To Brew: Use 1 teaspoon of tea per person, add boiling water and allow to steep for 3 – 4 minutes.
Tung Ting Oolong This select speciality is only produced in the mountainous region Nantou in Taiwan and is valued highly by tea connoisseurs around the world. It is firmly rolled and only briefly fermented as opposed to other Oolongs. The relatively short fermentation time ensures the rather light and fresh character, in contrast to the rather heavy, dark Oolongs which have a more tangy depth and spicy body. The leaf structure shines in olive and jade shades. The cup is a light amber colour. The first infusion is very vivid and reminds of the scent of peach blossoms.Oolong is a large leaf semi-fermented tea that is best thought of as a cross between a green and a black tea. It is brewed with boiling water and has especially good health properties. If you are new to oolongs this one is a great place to start.
To Brew: Use 1 tsp of tea per person. Add boiling water and allow to steep for 2-3 mins. If reused on the same day, the leaves can be reused for up to three times allowing slightly longer for each subsequent brew. Best served without milk though sweetener is fine.
Peach Blossom Oolong Fabulous semi-fermented Oolong tea using the traditional process. Wildly exotic. fruity roundness with fabulous peach oil and blossom. Stunning as an iced tea.Ingredients: Oolong tea, mango and peach pieces, plum, sunflower & calendula petals, natural flavours (bio compliant)
Kenya Purple tea Grown in the fresh climate of the Kenyan highlands, purple tea comes from a unique cultivar which instead of producing green leaves produces purple ones. The purple comes from anthocyanin the flavonoid responsible for giving blueberries their purplish colour. Anthocyanin has high levels of antioxidants, which have attributed health benefits.Purple tea is processed much like a Japanese green in order to preserve the antioxidants and is hand-picked by small-scale farmers on small, privately owned, plantations. The tea tastes like sweet plum and can be described as having a flavour similar to an oolong tea, with a lighter body than many black teas.
To brew, use one heaped tsp per person in a warmed pot and add freshly drawn boiling water. Brew for 3-4 minutes according to taste. Drink with or without milk and sugar.
Puerh 3 year Old
A superb 3 year old Pu-erh, which is a dark red tea with an earthy character that is noted for its health giving properties. Pu-erh is rather unusual and has properties that many other teas do not share.
The leaves come from the Yunnan Dayeh variety of tea tree - which is purported to be closely related to the original tea tree of pre-glacial times. The leaves are picked, rolled and withered in the hot sun. Then they are steamed and pressed into cakes (this pu-erh is broken up out of the cakes to make it easier to deal with). Over time, the tea matures and takes on an 'earthy' character. Pu-erh is then stored for years.
Pu-erh is often taken for relief of indigestion but has also been reported very useful in the reduction of cholesterol.
To Brew: Bring freshly drawn cold water to a rolling boil. Place 1 teaspoon of tea for each cup into the teapot. Pour water into teapot to cover the leaves then immediately pour the water of (in effect you are ‘rinsing’ the tea). Next pour the boiling water into the teapot over the ‘rinsed’ leaves. Cover and let steep for 2-5 minutes according to taste (the longer the steeping time the stronger the tea). The leaves can be re-used 2 or 3 times with a lovely variety of tastes with each brew.
The packaging is plastic free, the bags are plant based and are fully compostable.
