Fully unpasteurised and teeming with good friendly gut bacteria. Hand made in Tiny Batches by us in Petworth West Sussex.
Shelf-Life:
We ask our customers to store our products chilled/refrigerated, this is not to stop the product from going off, because it will not, but simply to slow the good bacteria down and make them drowsy, otherwise they eagerly eat all the crisp vegetables and make them soft, still edible, but not quite as delicious. We put 3 months use-by date on each jar, because we never know how our customers are storing our products, but given the correct storage, our fermented krauts will be good for months (6-9 months).
No Chemicals, No Added Water, No Added Sugar, No Vinegar, Under 1% Added Salt.
This is how we make our products:
We take pure fresh vegetables and slice them finely, once nice and fine, we add Himalayan Pink Salt (under 1%) before manipulating the mix manually. Once we are satisfied with the batch, we squeeze all oxygen out before sealing the batch to prevent any oxygen taint. The batch is then placed in our temperature regulated fermentation room, where it will mature at 18c for the next 6 weeks.
Each batch is tested weekly, where we monitor pH Levels, Batch Colours, Odours and Flavours. Only when each batch has met our exacting standards, is it released for supply. We are extremely hard on ourselves, simply because we want to produce nothing less than absolute perfection!

Hi, my name is Simon Arnold proud founder of the health-conscious food brand ‘The Sauerkraut Company’. Based here at the heart of the South Downs-National-Park in Petworth, West Sussex, near where I grew up. It's true to say, I'm among the green fields and Oak-Rich woodlands, the area that I love to my core.However, for nearly 30 years of my life, I lived & worked overseas in Germany, where I trained and worked as an Engineer for Mercedes-Benz.
The knowledge I gained over there from the locals, set me on the path I now lead. Experiencing from the folk around me first-hand the true art of fermentation, where we would ferment all kinds of weird & wonderful vegetables. The healthy art of fermentation quickly became a passion of mine, making naturally fermented Sauerkraut really struck a chord and I love it to this day! It is truly fascinating, that a basic vegetable can deliver far greater quantities of nutritional benefit to us once fermented than it does before the art and the magic of fermentation takes place.
All these years later, back in West Sussex, still fermenting vegetables, still perfecting the nutritious food my wife Karen and I make for you to enjoy and benefit from, in a really healthy way! From experience, we recommend eating 30-50g per portion prior to each of your daily meals. After a little while, you'll feel the wonderful affects & effects as I do on a daily basis...
