Healthy Caramel Slices
This recipe is one of my favourite ever go-to treats. I think it’s amazing that we can enjoy sweet treats but in a healthier way and life is all about being able to indulge every once in a while, right? You’ll eat these caramel slices with a lot of pleasure and reap the benefits from each ingredient. Anyway, this is what I came up with. I hope you like it!
Ingredients (makes 10 slices):
For the Base
- ½ cup of brown rice flour
- ½ a cup of flax seed
- ½ a cup of gluten free oats
- 1 tablespoon of coconut oil
- 1 cup of dates
For the Caramel Layer
- 1 cups of dates
- 3 heaped tablespoons of sunflower seed butter (or any nut butter)
- 1/4 a cup of water
- 2 tablespoons of brown rice syrup
- 1/2 a tablespoon of coconut oil
For the Chocolate Layer
- ½ a cup of cacao butter
- 1 and a 1/2 tablespoons of raw cacao powder
- 1 tablespoon of coconut oil
- 2 tablespoons of brown rice syrup
- 1 tablespoons of sunflower seed butter
Method
- Combine all the ingredients for the base layer and put into a food processor until the mixture is fully combined and sticky. Take the mixture and put it into a baking dish. Put this in the freezer for about an hour.
- For the caramel layer, pop all the ingredients for the caramel layer into the food processor until you get a creamy, caramel liquid. Pour this onto the base layer and then put into the freezer for another 45. We need it to harden before you add the chocolate layer so it doesn’t mix into one layer.
- For the chocolate layer melt your cacao butter on a low heat, add the sunflower seed butter once it’s nearly melted and stir. Add the liquid into a food processor with the raw cacao, brown rice syrup and coconut oil and blend until it’s smooth.
- Check that your caramel layer is solid before adding the chocolate layer then pop it back into the freezer for around 2 hours.
- Serve and enjoy!
