The Perfect Prebiotic Soup
I'm on a soup mission; a 'prebiotic' soup mission and this soup is no exception. Made with yam and chicory leaves - it's a good way of achieving good gut health for our overall wellbeing. This unusual soup can be jazzed up with a little imagination; maybe some chicken and additional herbs.
Prebiotics (not to be confused with probiotics), are food for bacteria that already live in our large intestine. They are a specific dietary fibre and found naturally in foods like garlic, green bananas and onions as well as being supplemented into products like yoghurts and some breakfast cereals. There are many health benefits to prebiotics: They dramatically increase the number of good bacteria in the gut, help increase the absorption of magnesium and calcium and keep blood sugars in check.
By introducing some prebiotics into your daliy diet, you will be creating a happy population of gut bacteria.
Ingredients:
- 225g (8oz; 2 cups) yam, peeled and chopped
- 1/2 litre (1 pint; 2 cups) vegetable stock
- 2 heads of chicory, chopped
- Fresh tarrogan, chopped
- Toasted almonds flakes
- Sea salt
Method:
Bring the vegetable stock to the boil. Add the yam and a pinch of salt. Bring to the boil and simmer until tender. Liquidize the yam and return it to the pan. Add the chicory and heat through. Finish off by decorating with the toasted almonds and fresh tarragon.
