Considered the ‘king of rice’ in Italy, Carnaroli like Arborio, contains more starch than other rice varieties so is perfect for risottos. With a larger grain it holds its shape better than Arborio rice and absorbs more flavours. This makes for a more textured, looser dish, and is ideal for risottos where grains need to be separated.
Carnaroli grows nearly twice as tall as Arborio or Vialone Nano making it more difficult to harvest and therefore a little more expensive.
Also recommended for salads and timbales. Cooking time approximately 17 minutes.
