A delicious artisan cured ham, Coppa Stagionale comes from trimmed neck meat, massaged and put under salt for ten days and aged in a humid environment for at least 6 months, giving it a wonderful aroma and powerful flavour. These free range pigs are reared totally wild grazing in Italy’s Po valley. Gluten and lactose free.
Ronaldo started his own salumificio in 2006. As a vet, he used his experience to produce the highest quality pigs for excellent cured meats. The focus has always been on wild grazing and wellness, using pigs reared in the Po Valley.
