Pure cacao exaggerates the meaty flavour in red meat. The Mexicans use it in Moles (the sauce, not the furry mammal) and combined with the earthy tones of cumin, any beef or lamb dish is enriched with a deeper flavour. Add a teaspoon to a chilli or a stew for a richness you won’t believe.
Don’t worry – you wont get a chocolatey taste (although we’d quite like that too…) – just a real richness and an extra dimension of flavour. Perfect for all slow cooked meats as well as BBQ rubs.
