Buckwheat Pancakes Recipe

These tasty buckwheat pancakes are super quick to make. Pair with fresh apricots, blueberries and pomegranate for a lovely weekend brunch! 

Ingredients: 

  • 150g Organic Buckwheat Flour
  • 1 Egg
  • 100ml Almond Milk
  • 1 tablespoon coconut sugar
  • 1 tsp Bicarbonate of Soda
  • 2 apricots - cut into slices / quarters
  • Handful blueberries
  • 1/4 pomegranate
  • 1 tsp coconut oil (to fry with)

Method:

  • Combine all your pancake ingredients and whisk well.
  • Heat the coconut oil in a large frying pan, once hot, ladel you mixture into your pan. I managed to fit 3 pancakes in at a time.
  • After about 2 mins (when your pancakes start to bubble in the middle) flip them and cook for one more minute. You can keep them in the oven to stay warm if you wish.
  • Once you've made your pancakes, gently fry the bluberries and sliced apricots for 1 min.
  • Stack your pancakes high and cover with your fruit. Squeeze over the pomegranate seeds. Add yoghurt / maple syrup if you wish.
