Raw Vegan Bounty Bites

Call me crazy but I used to love Bounty bars; whenever my family had a box of Celebrations I'd always be the one to eat the Bounty chocolates - in fact, I'd always eat the coconut flavour in any box of chocolates! Ever since I was young I've adored both coconut and chocolate so they were basically my idea of heaven. Now that I'm vegan and rarely consume anything containing refined sugar I don't eat Bounty chocolate anymore, so I decided to create my own natural and nutritious version of it; these wonderful bites are little balls of heaven and you'd never guess they're raw and vegan! I was so pleased with how they turned out because, like the best recipes always are, they were a complete and utter experiment. If you too were a fan of the Bounty but would rather nourish your body with wholesome foods then you'll absolutely love these beauties!

 

Ingredients
Makes 9 small bites


For the coconut filling:

  • 1/2 cup unsweetened dessicated coconut
  • 1/4 cup melted coconut oil
  • 2 - 4 tbsp liquid sweetener of choice, to taste

For the raw chocolate coating:

  • 3 tbsp melted coconut oil
  • 3 tbsp raw cacao powder
  • 3 tbsp liquid sweetener of choice

 

Method

Mix together the ingredients for the filling in a small bowl then pop it in the freezer for 5 minutes to firm up slightly (this will make it easier to mould into balls). When the 5 minutes have elapsed remove the bowl from the freezer and form 9 small balls, each slightly larger than an average-sized cherry. Place them back in the freezer on a small plate for another 5 or so minutes.

Remove the coconut balls from the freezer and mix together the ingredients for the chocolate coating. Dip one of the balls in the chocolate mixture and roll it around, making sure it's completely covered. Repeat with the rest of the coconut then place them back into the freezer on the small plate they were on before. Leave them in there for about an hour, then transfer them into an airtight container and either continue to store them in the freezer or keep them in the fridge.
