
Eton Mess with Raspberry Gin Coulis

The lovely Andre from Drunken Berries has let us all in on his secret recipe for Eton Mess - with a twist! This tasty summer recipe is sweet enough to satisfy any dessert cravings and takes only 10 minutes to make. What could possibly go wrong when there's meringue and gin involved? Yes you got it....nothing!
Ingredients:
- 1 Bottle of Drunken Berries Raspberry Gin Coulis
- 4 Meringue nests roughly crushed
- 150g of Raspberries
- 300ml Whipping Cream
- 1 Heaped tsp of icing sugar
- 1 tsp of vanilla extract (optional)
- Mint sprig (optional)
Method:
In a large bowl, whisk the cream with the vanilla and icing sugar until it makes soft peaks. These should slightly topple over when you lift the whisk out of the bowl. Then fold in 150ml of Raspberry Gin Coulis, meringue and ¾ of the raspberries.
Finally, divide the mixture between serving glasses, top with the remaining raspberries and garnish with mint leaves.
All that's left to do now is to chill them in the fridge until you are ready to serve (oh, and the washing up....)!
