Oat Snack Bars

I’ll admit it, I’m a prolific snacker. I like to be prepared with something “good” to satisfy my snack attacks before I get tempted by something seriously naughty. These oat snack bars are just the ticket to keep me going throughout the day.

Ingredients:

  • 400g of oats
  • 20 majool dates
  • 300ml water
  • 200g of raisins
  • 100g of golden linseed
  • 3 tablespoon of coconut oil
  • 2 teaspoons of cinnamon

Method:

  • Pre-heat the oven to 200C.
  • Pit the dates and place in a large saucepan along with coconut oil.
  • Gently heat for approx. 5 mins until the coconut oil melts and the dates go soft.
  • Place the dates and coconut oil in blender along with the water and blend to a smooth paste
  • Add the oats, golden linseed & raisins to the original saucepan you heated the coconut oil and dates in [this will ave you additional washing up] stir in the date mix.
  • Grease a baking tray [I used 6 x 12 inches] with coconut oil and then spoon in the oat mixture and even out.
  • Bake in the oven for approx. 30 mins or until top is golden brown.
  • Cool for 10-15 mins in the baking tray before cutting in to bars.
