Shakshuka

Stuck for a quick, easy and healthy breakfast, brunch, lunch or dinner? Well, look no further!
Shakshuka is a middle eastern staple of eggs poached in a spiced tomato sauce, there are loads of variations in the recipe, I'm sure you'll love this one which packs in 4 of your 5-a-day!
Ingredients
Serves 1
- 1 tsp oil
- Half a white onion, sliced
- 1 clove garlic, crushed
- 1 red pepper, diced
- Half can tinned tomatoes
- 1/2 tsp paprika
- 1/2 tsp cayenne pepper
- 1/2 tsp cumin
- 1/2 tsp caster sugar (optional)
- 2 eggs
- Seasoning to taste
- Toasted pitta bread and fresh coriander, to serve
Make it
Heat oil in a frying pan on a low/medium heat, fry the onion for about 5 minutes until soft, stirring regularly. Add the garlic and pepper and cook for another minute or so. Add the spices and cook off for about a minute then add the chopped tomatoes. Leave to reduce for 5-10 minutes, taste and adjust spices, seasoning and sugar to personal preference. Then crack in the eggs.
Cover the frying pan with a saucepan lid this will poach/steam the eggs which should take around 5 minutes for a nice runny yolk but cook for longer depending how you like your eggs cooked. Toast your pittas whilst you wait.
Sprinkle with coriander and a dollop natural yogurt if you like and enjoy!
