The Best Vegan Meat Recipes
It’s a fact: our vegan makers and confectioners will never fail to impress us. This year we’ve seen a lot of exciting, innovative new launches, such as egg free mayonnaise, vegan Wagon Wheels and gelatine free marshmallows, and we really can’t wait to see what plant-powered goodness the next few months have in store for us.
Vegan meat alternatives have also come a long way. We were amazed to discover vegan pulled pork, typically made from jackfruit, and even vegan fried chicken, commonly made out of seitan.
Our lovely makers over at Sgaia’s Vegan Meats, a small vegan butcher shop based in Glasgow, craft their mheat out of whole plant-based ingredients, wheat and soya protein. Their range includes vegan bacon, vegan burgers, steaks and charcuterie.
We’d like to share three of their vegan meat recipes with you to help you get started with cooking some incredible meat free meals at home.
Sticky Glazed Mheat Kebabs
150g Mheat
3 bell peppers
1 courgette
1 red onion
1tsp wholegrain mustard
1tbsp pure maple syrup - or agave
2tsp soy sauce (we used this one)
2tbsp coconut oil
Sea salt and pepper
Optional: BBQ sauce
Steps:
Preheat your oven to 200°C or griddle to medium heat. Blend maple syrup with mustard, soy sauce, coconut oil, and add salt and pepper to taste. Dip your chopped-up Mheat and vegetables in the mixture and thread the pieces onto skewers. Cook until crisp all over. (For the oven: cook for 15-20 covered, and 5-10 uncovered.) Drizzle with remaining glaze or BBQ sauce.
Mheat Cotoletta Alla Milanese
One 150g Mheat steak
Soy sauce
Corn flour
Bread crumbs
Sparkling water
Herbs
Steps:
Slice steak lengthwise in two fillets and marinate them in soy sauce and herbs for 15 minutes. Add a few tablespoons of cornflour and sparkling water to a bowl, mixing little by little with a fork, careful not to create lumps, until you get a runny paste. Add a couple of teaspoons of coconut oil per fillet and heat oven to 180C. Coat fillets in some cornflour, dip into the “batter”, and cover them in breadcrumbs until completely coated. Drizzle with lemon juice and serve alongside salad and vegetables.
One-Pan Creamy Gnocchi With Smoked Mheat And Mushrooms
100g Smoked Mheat
Coconut oil
25g mixed dried wild mushrooms
200ml oat cream
1tsp wholegrain mustard
1tbsp nutritional yeast flakes
300g gnocchi di patate
Rocket
Sea salt and pepper
Steps:
Heat a little bit of coconut oil in a non-stick pan. Toss in your Mheat cubes and let them sizzle until crispy. Set aside. Add 1tbsp coconut oil to the pan along with wholegrain mustard - when it’s clear, add the oat cream and mushrooms. Let your sauce bubble over low heat for a few minutes so that the mushrooms absorb the cream. Add nutritional yeast and cook a little more. Add gnocchi and a little water into the pan, cover, and stir a few times. If gnocchi starts to get dry, add water or milk. When it’s ready (2-3 minutes), throw in the Mheat, add salt and pepper, and mix well. Sprinkle with rocket leaves and serve.
