
Pear, Vanilla and Ginger Cake (and a Rap!)

I bet you've never read a recipe rap before have you? Well prePEAR to be amazed (or perhaps just slightly amused) because in celebration of British Food Fortnight I'm so excited to share with you my pear, vanilla and ginger cake, written in the best lyrics I could come up with!
And whilst my rapping game perhaps leaves a little to be desired, this cake is definitely a winner! It's so moist, fruity and delicious, perfect for teatime (or breakfast - I won't tell if you don't!).
So what inspired the rap? Well, last year famous rapper and music producer Rick Ross lost a bunch of weight, and when he was asked how he did it he put it all down to pears! Watch the video on YouTube if you want to see for yourself, it's pretty funny! But in all seriousness, pears are fabulous as they are low GI, so they don't cause a spike in blood sugar levels, which means this cake is a perfect little pick me up without the crazy sugar high!
Ingredients:
- 4 ripe British pears
- 1 cup pecans
- 2 cups oats
- 1/2 cup almond milk
- 1/3 cup pitted dates
- 2 tsp vanilla extract
- 1 tbsp coconut oil
- 1 tbsp ginger
The Rap:
Blend the oats and dates in yo food processor,
Don't forget to put the lid on or you might make a mess-a,
Throw in the pecans and the coconut oil too,
Now whizz it all up till it forms a sticky goo,
Add the almond milk, pears, ginger and vanilla,
Mix until it's smooth and soft like a chinchilla,
Spoon into a cake tin and stick it in the oven,
Bake it for an hour* and take out with a glove-n,
Don't be a fool, leave it to cool, even though the smell of it will start to make you drool,
We think you will agree that a cake this good is rare,

*at 180 degrees, please, and it will bake with ease
